Stewed Fruit


The perfect BBQ dessert, not only delicious, but very simple to prepare and cook. You just need a foil tray, the ones with a cardboard lid and lots of fruit. This is best with a mixture of fruits, especially those ripe fruits that have been reduced in price. You can pimp it up by adding some exotic ones, such as mango or papaya. You can also add spices, at Christmas we added allspice to add that festive flavour.

Serves 4

1 Foil tray around 14cm x 22cm
1 Large mango – nice and ripe
1 Punnet blueberries
3 Peaches or nectarines – nice and ripe
2 Pears
1 Banana
1 Tablespoon dark brown sugar
100ml Orange liqueur or Orange juice
1 Teaspoon vanilla paste

  • Chop up the fruit so they are equal size chunks
  • Fill the container right up
  • Sprinkle over the sugar, vanilla
  • Pour over the juice and give it all a good stir to mix the fruits together
  • Seal the tray and let the fruits get to know each other for a couple of hours
  • Place on the grill over the cooling embers for around 20 minutes. If it bubbles and leaks too much raise the grill
  • Carefully prise open and test the fruit. It should soft and delicious

We like to sprinkle a little granola or crushed biscuit over the top and serve with lashings of cream – bon appétit
