Tofu cooks really well on a BBQ, you just need to oil the grill well first or even better if you have a skewer rack. This will go well with the chapati recipe and you can up the heat of the marinade by adding more chilli to taste.
4 tablespoons vegan yoghurt
1 large red chilli
1 clove garlic
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon turmeric
1 star anise
1 teaspoon ground cinnamon
1 1/2 tablespoons tomato puree
1 tablespoon British cold pressed extra virgin rapeseed oil
- Add the marinade ingredients to a blender and zuzz into a sauce
- Cut the tofu into 4cm cubes and add to the marinade for at least 4 hours.
- Cook on wood skewers for 8-10 minutes a side – have a metal fish slice handy if any decide to stick!
Serve with chapati, Bombay potatoes, garlic tomatoes and a vegan raita – bon appétit
